One cup of granulated sugar

a pinch of salt

one tablespoon of vanilla

Combine all ingredients except the vanilla in a saucepan
Cook over low heat, stirring constantly until a small amount of mixture dropped into cold water forms a firm ball
Add the vanilla and place in a square dish, lightly greased
Let cool
Remove from dish without cutting and then cut into small squares with a sharp knife frequently dipped in hot water
Wrap each caramel in colored parchment paper.
