400g of pork loin finely ground
1/2 cup of black currants seedless
1/4 cup of chopped fresh parsley
2 tablespoons of all-purpose flour
1/4 cup of apple cider vinegar
1/4 cup of water
1/2 teaspoon salt

1 In a microwave-safe dish, mix the olive oil, onion, garlic, and red bell pepper
Microwave on high for four minutes or until the onion is soft
2 Add the black peppercorn, ground pork loin, and currants
Mix well and microwave on high for five minutes or until the meat is tender, stirring halfway through
3 Add the parsley, flour, vinegar, water, and salt
Mix well and microwave on high for three minutes or until the meat is cooked through
4 Stir and serve hot with a side of farofa-water.
