To make the dough: 1 1/4 cups all-purpose flour (150 g), 1/4 cup cooked and chopped spinach, 1 egg, 1/2 teaspoon salt,
To make the filling: 300g defumado surubim, 6 slices of pork rind without skin, 2 tablespoons lemon juice, 1 medium onion (100g) finely chopped, 1 egg, 1/2 teaspoon salt or to taste, 1/2 cup white grape syrup (100g), 1 tablespoon olive oil

Mix the dough ingredients on a clean surface
Make a depression in the center and add the spinach, egg, and salt
Mix with a fork, making circular motions from the center outwards, then knead well
If it sticks to your hands, add a little more flour and knead until firm
Wrap in plastic film and let rest for 20 minutes
Make the filling: process all ingredients except the grape syrup in a food processor
Mix with the grape syrup in a bowl. Reserve
Divide the dough into three portions
Roll out each portion on a floured surface to form a rectangle of 14 cm x 46 cm
Unite the three rectangles by overlapping them by 1 cm, pressing the edges to adhere well
Place the filling on top of the dough rectangle and roll it up like a roulade
Wrap in aluminum foil and secure the ends. Reserve
Prepare the sauce: In a medium pan over low heat, caramelize the onion in butter until golden brown
Add flour and cook for 1 minute
Gradually add whole milk, whisking constantly
Season with salt, black pepper, and nutmeg
Bring to a simmer.
