6 medium-sized onions, finely chopped

In a large skillet, sauté the onions in oil until they're golden brown
Transfer them to a container and refrigerate for at least one day
Brown the beef on all sides in the same skillet, then add salt, pepper, rosemary, and beef broth
Simmer over low heat for 3-3.5 hours, or until it's slightly tender
Refrigerate overnight in a shallow, covered dish
Preheat the oven to moderate temperature
Remove the beef from the refrigerator and let it sit at room temperature for about 15 minutes
Add the onions, tomato puree, sugar, and lime juice
Bake in the preheated oven for 20 minutes
Slice and serve with your preferred sauce
