3 tablespoons of olive oil
Salt and black pepper to taste

Heat the olive oil and sauté the chopped onion until it's transparent
Add the beef cubes and let them brown
Add the chopped escarole, stir with a wooden spoon, and season with salt and black pepper
Cover the pan and let it cook for 1 minute
Serve immediately.
