1 pound of lizard cleaned
Salt and black pepper to taste
2 cups (chops) of mustard
6 tablespoons (sopa) of toasted bread crumbs and grated cheese
2 tablespoons (sopa) of grated cheddar cheese
1 tablespoon (sopa) of olive oil
5 tablespoons (sopa) of butter

Season the meat with salt and black pepper
In a bowl, mix together mustard, toasted bread crumbs, and grated cheese
Add the olive oil and stir well until you get a consistent paste
Spread the paste over the meat
Heat the baking dish with butter for one minute to melt it
Transfer the lizard to the baking dish and bake in a medium preheated oven for 45 minutes, or until it reaches your desired level of doneness: underdone, just done, or well done.
