1 kg of lean pork loin
3 tablespoons of butter
3 tablespoons of olive oil
1/2 cup of mustard
1 tablespoon of grated ginger
2 tablespoons of lemon juice
1 cup of beef broth
1 red bell pepper, sliced
1 small pineapple, cubed
Salt and black pepper to taste
1 kg of lean pork loin

Cut the pork into cubes and season with salt and black pepper
Set aside
Next, melt 3 tablespoons of butter and 3 tablespoons of olive oil in a pan over medium heat
Add the pork cubes to the pan and cook until browned, stirring occasionally
Stir in the mustard, grated ginger, lemon juice, beef broth, and red bell pepper
Bring to a simmer and let cook for 15 minutes or until the pork is tender and forms a bit of sauce in the pan
Add the pineapple cubes and continue cooking for an additional 10 minutes
Serve hot with white rice
