Heat the olive oil in a braising pan
Add the short ribs and brown them on all sides
Add the garlic, parsley, paprika, and water
Stir and season with salt and black pepper
Cover the pan and cook under pressure for 25 minutes
Turn off the heat, remove from heat, and let cool
Cover with plastic wrap and refrigerate overnight
Use a skimmer to remove excess fat that forms on the surface
Transfer to a baking dish and bake in a medium oven preheated to 15 minutes
Serve immediately with mashed potatoes or potato puree.
