1 fish of 1 1/2 kg

250 g of spinach
2 slightly beaten eggs
2 tablespoons of butter or margarine
1/2 cup of breadcrumbs

Clean the fish and rub with 1 tablespoon of salt
Cook the rice and spinach separately
Drain and chop, the spinach and mix with the rice
Add the eggs and 1 teaspoon of salt
Place the stuffing in the fish and sew or pin with toothpicks
Melt the butter and place in a baking dish
Add a little water to the baking dish
Bake for an additional 30 minutes or until the fish is cooked, basting frequently
Serve 4 to 6 portions.
