In a pot, combine the pork, water, salt, soy sauce, and garlic
Bring to a boil, then reduce heat and let simmer for about 50 minutes, or until the pork is tender
Remove the garlic clove and discard
Strain and reserve the broth
Mix together the pineapple juice, cornstarch dissolved in half cup of water, vinegar, and pineapple juice in a pot, whisking until smooth
Gradually add the broth to this mixture, stirring constantly, until the sauce is thick and transparent
Add the pork and chopped pineapple, and serve
