1 tablespoon of olive oil
1 kg of lean pork, cut into 2 cm cubes
salt and black pepper to taste
1/2 cup of finely chopped onion
3 tablespoons of sweet chili sauce
3 tablespoons of soy sauce
2 tablespoons of grated ginger or in pieces
2 tablespoons of lemon juice
1 cup of apricot jam
1 tablespoon of olive oil

Heat the olive oil in a large frying pan
Add the pork, seasoned with salt and black pepper to taste
Let it brown well
Add the onion and fry until softened
Add the remaining ingredients and stir gently
Cover and cook slowly for about 35 minutes or until the pork is tender
If the sauce thickens too much, add a little water
Serve with rice
