2 Onions

1/2 kg of Lean Pork
3 tablespoons of Olive Oil
1/2 tablespoon of Fresh Grated Ginger
1 tablespoon of Salt
2 tablespoons of Curry Powder
1 cup of Water
1 cup of Coconut Milk
2 tablespoons of Lime Juice
Shredded Coconut for garnish

Peel the onions, cut them into pieces and blend with pepper in a blender
Cut the pork into 4 cm cubes
Heat olive oil in a large frying pan and fry the onion purê for 1-2 minutes
Add the pork and let it brown for about 3 minutes
Add ginger, salt, curry powder, and water
Cover and simmer slowly for about 40 minutes, until the pork is cooked
Add more water if needed to prevent drying out
Finally, add coconut milk and lime juice
Let it simmer for another 3 minutes and serve, garnished with shredded coconut
