For the filling
1 diced onion
2 tablespoons of olive oil
1 tablespoon of chopped parsley
1/4 cup of cooked ham, diced
2 tablespoons of chopped salami
2 slices of bread, cut into small cubes
1/2 teaspoon of lemon juice
1 nutmeg
Salt and black pepper to taste
For the skewers
6 flank steak fillets, about 120g each, cut in half
4 bread slices, without crust, cut into quarters
1 large onion slice
6 small thyme leaves
1 tablespoon of olive oil
1/4 cup of breadcrumb
For the filling

Slightly fry the onion in olive oil
Add the remaining filling ingredients
Cook over medium heat for 3 minutes, stirring constantly
Season the beef with salt
Distribute the filling over the fillets and roll up
Place 2 rolled beef pieces on each skewer, alternating with bread, onion, and thyme
Brush with olive oil and lightly dust with breadcrumb
Fry in a hot skillet or grill until desired doneness
Serve on the skewer
Serve 3 portions.
