8 slices of cooked lizard, 1 cm wide

4 tomatoes, peeled and seeded, diced
2 eggplants (650g) cut into cubes
salt and black pepper to taste

Fry the garlic in olive oil until it starts to brown
Add the tomatoes and simmer for 5 minutes with the lid on, over high heat
Reduce the heat and add the eggplant
Season with salt and black pepper
Cook until the eggplant is tender
Place the slices of lizard on a platter with the eggplant cubes around it
Serves 4 to 5 people.
