Cut the dried beef into small pieces and soak it in water overnight, changing the water a few times to remove excess salt
In a pan, heat the bean paste and sauté the aromatics: onion, garlic, tomato, and salt to taste
Add the beef, mix well, and cover the pan to simmer the beef
Add hot water as needed until the beef is tender and has enough sauce to cover it
Then add sliced green bananas (if needed, add more water to cover them) and cook until they're tender but not mushy
In the moment you take the pan off the heat, place slices of onion and chopped scallion on top
Serve with white rice
Note: This dish is more typical with dried beef and green banana, but can be made with fresh beef and ripe banana too
In that case, season the beef with garlic, chopped onion, black pepper, vinegar, and salt to taste
Sear the beef in bean paste and cover the pan
Wait until the water created by the beef evaporates, then uncover the pan and let it brown in the fat
From now on, proceed as before.
