In a large pot, combine 2 liters of water, lime juice, and rum
When it starts to boil, add the beef ribs and let cook for 20 minutes
Drain and rinse under running water
In a pressure cooker, heat the pork fat, add the garlic, paprika, and beef ribs, stirring until golden brown
Add water gradually (about 1 liter) to form a thick broth
Add the remaining seasonings and cover the pot
After 20 minutes of cooking in the pressure cooker, open the pot carefully, add cooked cassava cut into pieces, and let cook for an additional 15 minutes over low heat with the pot uncovered, allowing the cassava to absorb the flavors.
