1 kg of dried beef

Cut the dried beef into small pieces and soak it in water overnight, changing the water a couple times to remove excess salt
Heat the lard in a pan and sauté the aromatics: onion, garlic, tomatoes, and salt to taste
Add the beef, mix well, and cover the pan to cook the beef
Add hot water as needed until the beef is tender and has enough sauce to coat it
Finally, add the bananas sliced into thick rounds (if necessary, add more water to cover the bananas) and cook until they're tender but not mushy
When taking the pan off the heat, place onion slices and chopped scallions on top
Serve with white rice
Note: This dish is more typical with dried beef and green banana, but it can be made with fresh beef and ripe banana too
In that case, season the beef with garlic, diced onion, black pepper, vinegar, and salt to taste
Cook the beef in the lard and cover the pan
Let the sauce created by the beef evaporate
Uncover the pan and let it brown in its own fat
From now on, proceed in the same manner.
