Dried Beef
1 kg dried beef, desalted
8 tablespoons olive oil
2 green peppers, chopped
2 onions, chopped
4 tablespoons vinegar
2 teaspoons coriander
4 tablespoons finely chopped scallion
Salt to taste
Cassava Purée
1 kg cassava
1/2 cup milk
1 egg yolk
1 tablespoon butter
100g grated coalho cheese
Salt and black pepper to taste
Dried Beef
1 kg dried beef, desalted

Cassava Purée

1/2 cup milk
1 egg yolk
1 tablespoon butter
100g grated coalho cheese
Salt and black pepper to taste
Cut the dried beef into 5 cm cubes and place in a pressure cooker
Cover with cold water, close the lid, and cook over low heat for 30 minutes
Let it cool completely without opening the lid
Remove the meat pieces, discard any fatty parts, and finely chop the meat
Heat the olive oil and add the chopped meat
Fry until the meat is well browned and slightly crispy
Add the green pepper and onion and fry for 10 minutes; season with vinegar, mix well, and let it evaporate
Season with salt, add thyme and scallion, and reserve
Make the purée: boil the cassava in boiling water until tender but still firm
Drain and mash in a potato ricer
Transfer to a pot and add milk, egg yolk, butter, salt, and black pepper
Simmer over low heat until the purée forms
Sprinkle with grated coalho cheese and serve hot with dried beef.
