Preheat the oven to 200°C
In a saucepan, combine water and butter and bring to a boil over medium heat
Add all-purpose flour in one go and mix well until it detaches from the sides of the saucepan
Remove from heat and transfer to a bowl
Add eggs one at a time, whisking continuously until a smooth and creamy dough forms

Transfer the dough to a pastry bag and pipe onto a baking sheet in the shape of carolinas
Bake in a preheated oven for 20 minutes or until the dough rises
Reduce oven temperature to 110°C and continue baking for an additional 25 minutes or until the dough is dry
Remove from oven and let cool
Filling
In a saucepan, combine milk and bring to a simmer over medium heat
In a bowl, whisk together egg yolks, cornstarch, all-purpose flour, and Parmesan cheese
When the milk comes to a boil, add some of it to the egg yolk mixture and whisk well
Pour the contents of the bowl into the saucepan with the remaining milk and whisk continuously over low heat until thickened
Remove from heat and stir in unsweetened cocoa powder
Let cool
Glaze
In a saucepan, combine all ingredients and bring to a boil over medium heat, stirring constantly
Assembly
Cut the carolina in half and fill with the chocolate cream
Serve with the passion fruit glaze at room temperature.
