Slice the zucchinis into thin strips, lengthwise, with a vegetable slicer
Arrange them folded in half on a platter, cover with plastic wrap and refrigerate until serving time
Prepare the sauce: In a blender, combine the cheese, yogurt, and lemon juice
Season and blend well
Remove from the blender, add the green onion and mix
Cover with plastic wrap and refrigerate to chill
At serving time, sprinkle parsley over the zucchinis and top with the sauce.
