    Deskin and cut the potatoes into sticks. Wash and thoroughly dry them using a dishcloth or paper towel. Place the potatoes in a skillet with cold oil. Don't worry! The oil should be cold even. Cover and bring to high heat for 10 to 15 minutes until the potatoes turn golden brown. Drain on paper towels. The advantage of frying in cold oil is that the potatoes remain dry and crunchy. Moreover, it doesn't mess up the stove and neither makes smoke in the kitchen.
