6 thin slices of alligator (360g)

Cut each slice in half
Place each one between two sheets of plastic wrap and pound with the flat side of a meat mallet until almost transparent
Arrange on a large plate, overlapping them slightly and reserve
Prepare the dressing: mix all ingredients and spread over the meat
Garnish with chopped parsley and serve immediately
