1 pound tilapia, cleaned (1.2 kg)

"1 1/2 teaspoons salt"
"2 tablespoons unsalted butter, cut into small pieces"
"2 tablespoons chopped fresh parsley"
"5 anchovy fillets in oil, drained and rinsed"
"2 tablespoons olive oil"

Preheat the oven to 400°F (200°C)
Cut two rectangles of aluminum foil or parchment paper into 30 cm x 1 meter pieces and fold each one in half lengthwise
Set aside
With a sharp knife, make three or four diagonal cuts on one side of the fish and place it on one of the folded rectangles
Season the fish inside and out with lemon juice and salt
Set aside
In a small bowl, mix vigorously together the butter, parsley, and anchovy until you get a paste
Spread this paste inside and outside the cuts on the fish
Drizzle with olive oil
Cover the fish with the other folded rectangle of paper
Join the edges and seal tightly to form a package
Place in a large baking dish
Bake in the preheated oven for about 40 minutes
Transfer the fish package to a serving platter and serve immediately
