Clean the meat and place it in the freezer until partially frozen
To proceed, prepare the sauce by mixing well the olive oil, sea salt, black pepper, and lemon juice
Remove the meat from the freezer and cut into thin slices (preferably using a cold cuts slicer)
Arrange the slices on a large platter
When serving, place the sauce and Parmesan cheese shreds on top
