peel of 3 large oranges

1/2 tablespoon of salt
1/2 cup of sugar
1/2 cup of honey

Cover the peel with water, add salt and let it simmer slowly for 30 minutes
Drain
Cook again with water until the peel is soft
Drain
Remove the white pulp from the peel
Cut the peel into strips
Heat the honey together with sugar and 1/4 cup of water
Allow it to come to a boil
Add the peel and let it simmer slowly until it becomes transparent
Let it cool down in its own juice for several hours
Warm up again
Drain and spread on aluminum paper to dry
If desired, pass through additional sugar.
