4 cups of sugar
4 cups of roasted cashews

Bring the sugar and water to a boil, stirring constantly until dissolved
Stop stirring and let it reach the thread stage (see page 56)

Remove from heat and add the cashews
Stir with a wooden spoon until the syrup starts to thicken

Use a skimmer to remove the cashews slowly and transfer them to a flat strainer
Let any excess syrup drain off and let it cool down

Transfer to an airtight container and store until serving.
