1 cup of grated carrot (available at party supply stores)
4 tablespoons of water

In a bowl, mix the carrot and egg white together and gradually add the water until you get a compact and moldable mixture
Dust a truffle mold with grated carrot and shape the mixture into equal-sized balls
Press the truffles with another mold and let them rest for 5 minutes
Remove the truffles from the mold and let them dry completely
Melt the chocolate in a water bath and, using a fork, coat the truffles and place them on parchment paper to dry again
Trim the excess chocolate and wrap each truffle in plastic wrap
Assemble as desired or use as a filling for Easter eggs.
