Peel the onions and cut a slice off one end
Use a knife and spoon to remove the core without cutting through the sides
Season with salt and steam the onions for 30 minutes
Boil the sweet potato with the onion slices and cores until they are tender, then drain and mash with a fork
Season with salt, black pepper, and parsley
Heat half of the olive oil and caramelize the prosciutto
Add the pork loin mixture and mix well
Season with salt and black pepper to taste
Stuff the onions with the mixture and top with grated cheese, breadcrumbs, and the remaining olive oil
Bake in a medium-hot oven until golden brown
Serve hot or cold.
