2 large carrots, peeled and thinly sliced
4 small zucchinis, peeled and thinly sliced
1 medium onion, cut in half
1 tablespoon olive oil
1 small red bell pepper, finely chopped
salt and pepper to taste

2 tablespoons grated Parmesan cheese

Sauté the onion in olive oil
Remove the onion and add the carrot and zucchini
Let it simmer for 10 minutes
Season with salt and pepper to taste
Add the water and let it cook slowly for 15-20 minutes, or until the vegetables are tender
If the carrot is still hard, add the zucchini a few minutes later
Sprinkle with Parmesan cheese and serve.
