Heat the olive oil and sauté the onions until almost golden
Add raw, chopped carrots and let them brown
Add the grated ginger, water, salt, and simmer to cook the carrots
Blend everything in a blender
Return this mixture to the heat, add light cream, and cook until it comes to a gentle boil
Let it cool and garnish with a drizzle of olive oil.
