1 medium-sized green mamão (1.6 kg)

Roast the mamão in boiling water for 30 minutes
Drain
Cut it lengthwise, then split it open
Remove the seeds
Remove the pulp and chop it coarsely, leaving the skin intact
Fry the onion and scallion in 1 tablespoon of butter until caramelized
Mix with the mamão pulp and season to taste with salt and black pepper
Place in the skins
Dust with flour and top with the remaining butter, cut into small pieces
Bake in a preheated moderate oven (180°C) for 20 minutes
