Three quarters of a cup of orange juice
Two tablespoons of grated orange peel

Wash and grate the carrots
Rinse well
Cut into strips
Mix in the salt, sugar, butter or margarine, and orange juice
Place in a saucepan
Add the carrots
Cover the saucepan
Let it come to a boil
Reduce heat and simmer for 15 to 20 minutes or until the carrots are tender
Sprinkle with grated orange peel
Serve four ways.
