FOR THE CRUST
1 1/3 cup of Maria biscuit crumbs, broken into pieces (23 units)
3/4 cup of toasted Brazil nut (115 g)
1/4 cup of brown sugar (160 g)
2 tablespoons of fresh ginger, finely grated
3 tablespoons of unsalted butter
FOR THE FILLING
560 g of cream cheese at room temperature
1 1/2 cups of sugar
1 tablespoon of lime zest
2/3 cup of heavy cream (180 ml) mixed with 1 tablespoon of lime juice
4 large eggs
FOR DECORATION
1 medium-sized mango, pit removed (300 g)
2 kiwis, peeled and sliced (160 g)
1/2 avocado, pit removed (900 g)

Preheat the oven to 180°C (medium)
Grease a removable-bottom pan with plenty of butter. Reserve
MIX THE CRUST: process the biscuit crumbs, Brazil nuts, brown sugar, and ginger in a processor until a fine crumb forms
Add the butter and mix until the crumbs are well coated
Spread the crust mixture evenly over the bottom of the prepared pan and press it down with your fingers
Bake for about 5 minutes, or until firm to the touch
Remove from the oven and let cool completely
MIX THE FILLING: in a stand mixer, beat the cream cheese, sugar, and lime zest until smooth
Add the heavy cream mixed with lime juice and beat until well combined
Add one egg at a time and continue beating until smooth and creamy
Pour the filling over the cooled crust and bake for about 1 hour, or until set
Check by gently shaking the pan: the edges should be firm and the center still slightly jiggly
Remove from the oven and let cool for 10 minutes
Use a knife to loosen the edges and remove from the pan
Chill in the refrigerator for at least 8 hours or overnight
DECORATE THE CHEESECAKE: just before serving, cut the mango into slices, kiwi into wedges, and avocado into triangles
Arrange the fruits over the filling and serve chilled
Each slice contains approximately 480 calories.
