When purchasing the fish, clean it by removing the scales and backbone
Cut off the tomato skin, cut into pieces, and mix with minced onion, garlic, and parsley
Place the cod in a baking dish or oven-safe form
Cover with tomatoes, garlic, onion, and parsley
Add olive oil, salt, black pepper, white wine, and butter broken into pieces
Add bay leaves
Bake in the oven for about 40 minutes and serve with the leftover sauce from the baking dish, garnished with cooked potatoes if desired
