800 g medium shrimp

Remove the shells from the shrimp
Reserve them
Place the shells and heads in a pot, thoroughly cleaned
Add the onion, parsley, and butter and sauté, stirring occasionally, for about 10 minutes
Add the water, cover, and simmer on low heat for 30 minutes
Gradually blend everything in a blender
Strain through a fine-mesh sieve and return the broth to the pot
Add both types of wine and bring to a boil
When it starts to boil, add the reserved shrimp and cook for 3 minutes or until pink
Season with salt to taste and serve.
