Mash the garlic, salt, butter, and parsley or cilantro together with a mortar and pestle, then apply to the lobster meat
Place the lobsters on an oiled baking sheet and broil until lightly browned
Set aside
Prepare the cheese sauce: In a pan with butter, sauté the onion and garlic for a few minutes
Add the cheeses and stir until smooth
Add the heavy cream and white wine
Let simmer and adjust seasoning
Place some of the cheese sauce over the lobsters and put in a preheated oven at 200°C for 5 minutes or until heated through
Serve with slices of pineapple and boiled potatoes
