Season the fish cutlets with salt, lemon juice, and reserve
In a medium pan, melt 1 tablespoon of butter or margarine and sauté the onion until it starts to brown
Add the pear, lemon juice, and salt to taste
Mix well and cook for 1 minute
Add the flour dissolved in water and cook, stirring constantly, until slightly thickened
Check the seasoning and add hot peppers as needed. Reserve
Dredge the fish cutlets in the remaining butter or margarine until golden brown on both sides
Arrange in a serving dish and cover with the sauce
Serve for 4 people.
