Soak the candied damson, dried fig, and raisins in white wine for 2 hours
Drain and reserve
Debone the chester and open it on a flat surface, season with salt and black pepper. Reserve
In a food processor, beat the chicken breasts, eggs, and a pinch of salt
Spread this mixture over the chester and top with dried fruits
Roll the chester like a roulade and wrap it in plastic film
Place in a medium oven preheated for approximately 1 hour and 15 minutes
Serve the warm cheese cut into medium slices.
