2 1/2 cups of chicken broth
1/8 teaspoon of onion salt
1 tablespoon of finely chopped onion
1/2 teaspoon of thyme
1 1/4 teaspoons of mustard seeds
1/8 teaspoon of black pepper
2 tablespoons of freshly squeezed lime juice
1/3 cup of pitted green olives, sliced
2 1/2 cups of cooked and chopped chicken breast
1/3 cup of heavy cream

Soak the gelatin in 1/2 cup of cold water
Heat the chicken broth and add the gelatin
Stir until dissolved completely
Mix the gelatin, onion salt, finely chopped onion, thyme, mustard seeds, black pepper, and lime juice in a bowl
Refrigerate until firm
Add the green olives, cooked chicken, and heavy cream to the mixture
Pour into a mold and refrigerate until set
Unmold over lettuce leaves and serve
