Add the potato mixture with the onion broth, the sauce, and the whisked egg
Season and beat well
Cover the sausages with the mixture and shape into croquettes
Dredge in biscuit flour, then dip in the beaten egg and finally dredge in the biscuit flour again
Fry in very hot oil
Make 6 to 9 croquettes.
