Remove the heads and scales from the sardines
Open each one in half and remove the spine
Wash them well and then dry
Season to taste
Close the sardines and arrange them on a round, non-stick baking dish, greased with olive oil
Top with garlic and oregano
Distribute tomatoes over the fish and season
Drizzle sardines with olive oil and bake in a moderate oven (180°C) for 15 minutes
