Brush the skewers with 1 tablespoon of olive oil and season with salt and pepper
Preheat a grill and cook 2 skewers at a time
Let it cook until browned on both sides
Repeat the process with the remaining skewer pieces
Assemble the finished skewers in a warm serving dish
Heat any remaining olive oil in a pan and sauté the tomatoes
Pour the tomato mixture over the skewers and sprinkle with basil
Serve hot.
