1 whole skirt steak, cleaned and trimmed
Coarse salt to taste.
Sauce:
2 cups of chopped fresh mint
12 cloves of garlic, minced
3/4 cup of white wine vinegar
2 cups of grated Parmesan cheese
1 cup of black pepper, freshly ground
1/2 cup of water
2 crushed garlic cloves
Salt and black pepper to taste

Sauce:
Combine all ingredients in a saucepan and simmer over low heat for 30 minutes
Remove and adjust seasoning. Reserve
Season the whole skirt steak with coarse salt
Place the skirt steak on the oven rack and arrange a baking sheet underneath the meat - allowing the fat to drip onto it
Bake in a medium oven for, approximately, one hour and remove from the oven
Beat the meat to remove excess salt and serve immediately with the cold sauce.
