16 medium-sized dried mango pieces, peeled, seedless, and diced
900g of seedless raisins
1 cup of finely chopped onion
1 cup of finely chopped red pepper
4 cups of plain or common brown sugar
3 tablespoons of mustard seeds
2 tablespoons of ground ginger
2 tablespoons of salt
2 red peppers
1 crushed clove

Mix all ingredients and cook until thickened (about 1 hour and 15 minutes)
Stir frequently to prevent the mixture from sticking to the bottom of the pan
Pour still hot into preheated jars, leaving a 6mm gap on top
Close tightly and cook in a water bath for 10 minutes
Make about 5-6 jars of 500g each
Use as accompaniment to poultry or meat
