4 large green mangoes, pit removed and chopped
1 lime, peeled and seeded, finely chopped
1/2 cup of grated ginger
1 cup of black currant jam, seedless
2 tablespoons of ground ginger
1 1/2 teaspoons of salt
A pinch of red cayenne pepper
1/2 cup of apple cider vinegar
4 large green mangoes, pit removed and chopped

Combine all ingredients in a large bowl
Place the mixture in the microwave and cook on high, covered, for 10 minutes
Release the pressure and continue cooking for an additional 25 minutes at the same heat or until it reaches a thick consistency
Let it rest for 5 minutes in the oven
Serve chilled to accompany roasted meats and chicken curry.
