Beat eggs in a bowl until foamy
Add olive oil, flour, liqueur, and lemon zest; mix well to form a dough
Add a little more flour to obtain a dough that can be shaped into fine rolls about the thickness of a pencil
Cut the rolls into 1 cm pieces and fry them in hot oil until golden brown; remove with a slotted spoon. Reserve
Prepare the syrup:
Place honey in a saucepan and heat over low heat until it reaches a firm-ball stage (remove some syrup and test its consistency by dropping it into cold water)
Add chocolate chips and crystallized fruits; mix well
Add the fried dough pieces to the syrup and mix well
Pour into a 23 cm greased mold, pressing down firmly; let cool completely before removing from mold.
