1 tablespoon of light butter
3 slices of lean turkey breast without skin
2 leaves of fresh lettuce
4 slices of prosciutto
1 tablespoon of low-fat natural yogurt
Dietary salt and black pepper to taste
1/2 medium tomato cut into slices
1/2 cup of pickled cucumber cut into slices
2 scallions in brine
1 tablespoon of light butter

Spread light butter on the turkey breast slices and place them in a hot oven until lightly toasted
Assemble the sandwich: on one slice of turkey, add a leaf of lettuce, 2 slices of prosciutto, 1/2 tablespoon of yogurt seasoned with dietary salt and black pepper
Finally, add slices of tomato
Top with another slice of turkey and repeat the filling, ending with the turkey
Poke two toothpicks into each half of the sandwich
Cut in half lengthwise and garnish each half with slices of cucumber and scallions.
