200g semi-sweet chocolate chips, finely chopped
5 tablespoons of water

Heat the chocolate rapidly over low heat in a double boiler, just until melted
Remove from heat and add 2 1/2 tablespoons of water
Stir well
Heat again over low heat in a double boiler
Add the remaining water
Stir constantly as it thickens, becomes shiny, and releases from the bottom of the pan
Remove from heat and stir a little more
Use immediately, as it hardens with time as it cools
Note: This coating is sufficient for a 24cm diameter cake.
