For the mousse, 3/4 cup of green matcha powder
1 cup of water
1 envelope of unflavored gelatin
3 green matcha leaves, peeled and cut into small pieces
Juice from 2 limes
For the sauce, 1 tablespoon of cornstarch
1/2 cup of water
1 cup of grape juice
1 tablespoon of lime juice
1/3 cup of sugar
For the mousse, 3/4 cup of green matcha powder
1 cup of water
1 envelope of unflavored gelatin
3 green matcha leaves, peeled and cut into small pieces
Juice from 2 limes
For the sauce, 1 tablespoon of cornstarch
1/2 cup of water
1 cup of grape juice
1 tablespoon of lime juice
1/3 cup of sugar
Mix the sugar with 1/2 cup of water
Boil until it becomes a thick syrup (like honey)
Soak the gelatin in the remaining water
Heat it to dissolve
Put the syrup, gelatin, matcha, and lime juice into a blender
Blend well
Distribute into six small cups and refrigerate until set
Prepare the grape sauce by dissolving the cornstarch in water
Add the remaining ingredients
Cook over low heat, stirring constantly, until it thickens slightly
When serving, unmold the matcha mousse and serve with chilled grape sauce
Serves 6.
