2 cups of coconut milk (480ml)
2 1/2 cups of shredded coconut (200g)

Grease a flat surface with butter
In a large saucepan, over high heat, cook all the ingredients except for the food coloring, stirring occasionally, until the sugar dissolves
Stop stirring, reduce heat, and cook until the mixture reaches a soft ball consistency (test by scooping some of the mixture into a cold glass of water; if it forms a moldable ball, it's ready)
Remove from heat
Divide the mixture into equal parts
In each part, mix in drops of food coloring to achieve the desired color (if you want white coconut treats, do not add coloring)
Using a spoon, remove small portions of the treat and distribute over the greased surface, forming hills
Allow it to cool completely
Remove the treats with a spatula and transfer to a serving dish
Garnish with fresh mint leaves and serve
